I really enjoy servers that have a variety of areas! I play on one that has a main survival town, a creative one, pvp, spleef, all sorts of stuff! It even has a few different themed worlds. I absolutely LOVE it! That, and the server is very well organized and has clear rules as to what can and can't be done.
So I'd say that good server management and variety makes for a good server.
