I play Java the most because I like the features better. Modding is so much better on Java, and there's no achievement objective to not use mods that just boost performance. I can also use a VanillaTweaks datapack to use the bundle, and make things like my craftable amethyst shards datapack (yes I'm shamelessly plugging). You can also place small items on the same block. Like an item frame on the same block as a button, and the VanillaTweaks datapack for moveable armor stands is so much better than Bedrock's presets when you shift and click an armor stand. The datapack adds the option to lock item frames and make them invisible too. Shaders are better on Java too because on Bedrock shaders only work on mobile. If you play on Bedrock for performance, you probably don't have an RTX graphics card. Client Side Mods that make it so potion effects don't move your inventory, and make it so you can see the inside of your shulker box in an intuitive way are super useful. Server side mods that just tweak things are awesome too. Carpet mod is a good example. Conncected textures is another reason I like Java. A lot of the problems with Java can be solved with mods too. There's a mod called Item Model Fix that removes the gap from item models that you can see through which is a big problem. Carpet Mod adds moveable pistons, the ability to disable Minecraft's anti-cheat to reduce lag, etc. Bedrock is great because of parity and crossplay and all that, but I don't play Bedrock unless I want to play with friends who don't have Java because of this.
