    Taco Bell and Burger King.
BK usurps McDonalds because it doesn't screw over its customers with tiny fries.
TB is just objectively delicious >.>

Nope. I've heard that it's extremely difficult for developers to make changes to large games with huge communities, and honestly I can understand why.
The reason why an independent developer or a group of them can make "much higher quality" updates is because everyone has different preferences. When it comes to updating Minecraft, you're not just pleasing a small community of people, who, at any time can just switch to the original vanilla version. The version you're making IS the vanilla version. It's the default. Making Minecraft too "complicated" is what Mojang wants to avoid.

Minecraft's community is also extremely diverse, and if they added dozens of content packed updates every year or every few months, it would be extremely difficult for the community to keep up with said content. Minecraft is at heart, supposed to be a simple game where you can express your creativity freely.

Think of it like cooking a meal, at any time, you can add different spices and goodies to your masterpiece to make it more complex, but eventually it will become just an overcomplicated mess that is hard to understand, and more importantly, enjoy.

Sure! Here's a few examples, that, although are old, still prove my point:

    Slamacow's Witch Encounter
    SpiceVipe's Order of the Pick
    BlueMonkey's OM NOM NOM

All of these videos have simple titles, and eye catching, simple thumbnails which lack text (with the exception of slamacow, but the the text is still out of the way of the main content in the thumbnail). I guess that's where you should start.

"Over composing" yourself can also be off putting for your audience, try being less direct and more simple with your channel's theme, which includes thumbnails/titles/descriptions.

I hope I'm not being overcritical, but you should definitely work on improving your content before complaining about not getting feedback/interaction.
In all honesty, you might get more attention through posting less serious-themed videos (think memes/or just satire content) rather than something with a straightforward plot. I'd much rather watch something unexpectedly funny as opposed to no offense, 2014-esque amateur animation that is clearly catered towards children. People nowadays, whether that be 9 year olds watching Minecraft animations, or adults trying to feed their dopamine addictions, are VERY spoiled. You just need to be more unique.
