The bamboo beast: A tall humanoid/stickman creature with bamboo legs and arms that will protect pandas by trowing mobs and players in the air (Like the iron golem)
For the drop, I think bamboo and jungle related items are a good choice
infested blocks, not the stonebrick variant that makes the stronghold more dangerous, just the cobblestone one wich does absolutely nothing except being anoying for builders and doesn't even spawn naturaly
