Well its fun that they are still updating this decade old game. I like their updates and features. But don't you also think that with every update minecraft getts easyier? I mean with the introduction of piglins, there is no need anymore to farm endermen since they can trade you pearls, with the introduction of allays you now don't need hoppers for your farms anymore. I kinda miss this dangerous feeling. That feeling you that you have when entering an ancient city, that used to be there constantly back in 1.8 . They are killing minecraft a little while also fixing bugs and makeing it better.
Another thing: They are adding to many exotic animals! For example, we got axolotls and pandas, but there are many more common animals that are missing. I am NOT talking about insects like ants and bugs, I mean more dog variants, squirrels, normal birds, deers, moose, bears and so on. But thats just minecraft. They may make minecraft easiyer every update, but they also add new Dungeons, blocks and mechanics like the Sculk.
Long story short:
Should they keep updating?
Yes, but they should be more simplistic and minecrafty
