I use paint as a Skinning program so I'm starting out slow, and I'm not sure what you mean by staying away from default programs, but I will try to improve from what you have told me

I find that my style of shading is not great and I usually just end up scrapping a fully shaded skin because it looks shabby, and I usually just end up making my shading like camoflauge and end up making randomly shaded skins.
I spawned into the server, and I started walking, and I realized that the server was all mountain terrain. After waling a bit I found out through serious lag/glitching/bugs that the owner was a complete troll and put the spawn point as the Farlands and only if you survive a day and a night does he teleport you into a forced Hunger Games, and if you lose you go back to the Farlands, and this continues until you win, after time after time trying, and when you win, the owner bans you.

I was playing my survival island, with no mods because I'm too stupid to install them, when night fell. Naturally I went inside and was about to go to bed when something caught my eye. I looked out of my window to see that every mob that could stand was crawling like the exorcist. I then went outside to find out what was happening when I teleported into the Farlands and promptly died.
Use Paint and use a pencil to do your work either drawing it out or doing it pixel by pixel, also, when using Paint, maximize zoom but keep the skin 64x32. I use Paint and find it very useful.
