At worst I could call it mundane, but not due to lack of effort from your part, but simply you're still learning the pixel art and it is fine to create imperfect art forms in beginning. Regarding the pixel art, it falls to same category as e.g. cartoon, some requirements in general visual arts shall be met to work comfortably with it (by this I mean ability to create depth, perspective and shape for your creation). Also the mob texturing is much more complicated than the regular pixel art, as you need to follow UV maps. So perhaps consider starting from easier approach? If you wish to keep it Minecraft-related, how about starting from texturing blocks or have more freedom with pixel art builds? Regardless of your decision, I wish you luck and willpower.
