In my opinion, java is more versatile. While bedrock is Microsoft's main focus because it brings together all communities and makes them money off of marketplace, the java community runs itself, with mods, shaders, plugins, etc all releasing from the players. Plus, java can do way more then bedrock anyways, so if you're looking for things to do, and want to customize the game (and play on a computer that wasn't made 14 years ago), then play java.

I personally hate the 1.9 combat update the most. I don't understand why they added it, they could've just kept the old combat system and added the duel-wielding and stuff. All the other updates were so unique but 1.9 was just all about combat. At least for me.
As long as you can allocate at least 4GB of ram to a server, I recommend using something called MCSS (MC Server Soft). It's freeware and it's super easy-to-use and it helps you make any server. Super customizable and there are options to make it 24/7.
