So for our server I decided to go with a giant-flower-themed gym. It's a pretty easy parkour challenge made to look like a fairy-ring of flowers, and as such was perfect for a fairy type challenge! All the flower designs are based off of real flowers, with no blueprints. I do make use of World Edit!
