oUnique Houses/Buildings/Towers, Bridges, Statues, Vehicles.
oContraptions: Mob Tower/Destroyers, Item Generators (Cactus Farms, Wheat, Sugar Cane), etc.
oDomes, "Awesome" naturally-made worlds, 8-Bit/16-Bit Art, Ancient builds (Pyramids, etc).

You just have to put your mind to the limit. If you want to be creative in-game, you must be thinking creative for real-life physical objects. I take inspiration from Modern Art and Modern Homes, and I like to provide people contraptions that generate lots of useful items for their Minecraft Adventures.
