Hi Brightinthemiddle!
The server difficulty should be on Normal / Hard, depending on the world you are currently in. I will go and check each one today and make sure everything is in order.
As far as the server being new, MoleSMP has released a new world on version 1.19.2 and therefore everyone has reset as a new season comes into play. The Minecraft Day statistic has not been reset as we've played previous seasons prior to this version. Sorry for the confusion!
