Been practicing with blockbench and its definitely a very user-friendly and easy to learn program! I'm just, still not a very artistic person so I haven't really made anything I'm happy with yet. Thought I'd share a couple of practice models anyways to help my make profile less empty.

It's supposed to be a gachapon machine. I don't think the model itself is terrible and if such an object were to exist in minecraft, I could see it looking something like this, the texturing isn't great though. It's all vanilla textures, white stained glass, white shulker boxes, and amethyst block, but I think it would really benefit from a well-made custom texture. It was a good object to practice with because it was easy for me to imagine how to simplify the shapes into blocks.
I'm actually commissioning a gachapon model now since I wasn't happy with this and I wanted to get around to actually implementing the feature on my server the model was intended for, so I thought I would buy a model instead of waiting for me to get good enough to be able to make it myself.

llamas. they were and attempt to recreate the isometric pixel art style from the bedrock achievements.

The cream llama I did mostly by sight, and the brown llama I counted the approximate number of pixels. So in theory, the proportions of the brown llama should be more true to the image, but I think the cream llama looks better. It's possible that the achievement image isn't "true isometric", making counting pixels the wrong approach, or I could have just counted wrong, or maybe at the right angle it would look better. who knows! but even if it isn't totally accurate, I do like my cream llama enough that I've been using it as an icon on minecraft related sites. I think trying to imitate something that is minecraft related piece of art, but not actually a minecraft model is another good form of practice.
If anyone has any good practice prompts let me know! I haven't really been able to think of what else to try and make.
