I believe that lamb should be dropped by sheep when you kill them, and this could then be cooked to give lamb chops.
Cows and pigs have their own specific type of meat, but currently sheep do not. Currently sheep only drop wool.
The MineCraft wiki states that Jeb once said that they may add mutton in the future that drops from sheep. But we have still not seen this in the game.
I can't understand why they have not added this simple feature yet...
