MINECARTS
Specifically minecart tracks. I think if you put a long row of powered tracks then you should go faster. OR, there could be a second tier of minecart tracks to make you go faster. They could be crafted by surrounding a piece of track with slimeballs.
NEW DIMENSIONS
There should be more than just the Nether and End. Maybe a more endgame type dimension sort of like the Aether, but you used diamond tools to get the ore and stone in the new world. There would be new ores and mobs, and your iron sword would be like punching a mob with your fist in the overworld.
MORE USES FOR STONE AND WOOD
More uses for materials you take for granted. You normally get a surplus of wood and stone in the beginning of the game, and then you barely use it for anything after you get higher tier items. I don't know what they'd be used for, but they need more use.
