You can mix dyes together to get the exact colour you want!
(dying books doesn't delete the text inside, if you where wondering)
You can use honeycomb to remove the enchantment glint from signed books.
You can also use an amethyst shard to add the enchantment glint back.

Just a single wonder, why put '"components": {"minecraft:custom_data": {}}' in the dye recipes ?
For some reason the recipe didn't work without that component.
My best guess is that the game thought the input book was the exact same item as the output book, so the recipe was "useless" and disabled it. Maybe because the dye_colour component isn't normally used for books? Not sure though.
