So I just needed a datapack so Enderchests are impossible to use on a server. But because there was none on the internet that I could find, here's the one I created, if you need one...

Explanation:
-> Enderchests are still craftable, but...
-> Enderchests will vanish out of your inventory
-> Enderchests will despawn when in mining range
-> Enderchests will not drop
