Piglin heads are hidden behind the lava bit of that one bastion that looks like a giant piglin head. Bridge Bastions
They're also supposedly hidden in stables bastions, but I'm yet to find one naturally... not that I've looked that much.
It's because the hoglins killed them when they're trying to tame it... i guess.
Honestly I just looked through the creative inventory and found the piglin head, and remembered it existed... because why would you ever get one.
