Mount/Dismount
Get a villager close to the saddle of a saddled entity and look at the villager to get them to ride it.
click a villager while not sneaking to get them to dismount.
Silence/Un-silence
While sneaking use wool or carpet on a villager to silence them.
While sneaking use shears on the wooled villager to remove the wool and un-silence them
AI On/Off
look at a villager standing above a magma block to turn off AI
move magma block and looking at them to turn their AI back on
