I'm honestly going to have to say Boba Fett. If they had kept him alive longer in Return of The Jedi, he'd be probably (one) of my favourite Star Wars Characters of all time.

The fight against him is considered to be one of the most memorable Star Wars moments, and it really helped develop Obi-Wan in the character we know him as.

Newsflash, Darth Maul isn't part of the original movies, which are actually A New Hope, The Empire Strikes Back, and Return of the Jedi. Unfortunately, I don't think Darth Maul would count towards this.
