When it comes to chunks, does anyone know the average number of blocks in a chunk that aren’t tnt proof? I would like to know this to find out how much time it would take to destroy a square YxY.

You might get a reasonable estimate (actual number will vary significantly by biome in addition to the RNG effects) from looking at DocM77's perimeter videos from Hermitcraft Season 9.
These used a 'world eater' (set of flying TNT dupers) to do most of the excavation. IIRC he mentions the time required fro teh machine to work which could be used to work out time per chunk (which would seem to be the number you're after).
This wouldn't be exact (among other things a single 'unfortunately placed' lava source fairly high up could shield a substantial 'cone' of otherwise breakable blocks), but the random effects would likely smooth out if your hole was 'large'.
