It is possible for me to "follow" texture packs and mods so I can get a notification if they get an update?

Subscribing to the creator will give you a showcase in your main feed on the site, but there are no "Update me on this thing only" button. Might be worth giving it as an idea :D
The nearest approach to this of which I'm currently aware would be to create a collection of items one wished to follow (see https://www.planetminecraft.com/blog/pmc-collections-collect-organize-and-share-your-favorite-minecraft-submissions/ for how to do this) which would make manually checking back easier.
