I was wondering how do I remodel a Minecraft entity so it looks different and changes the texture?

You need Optifine to change entity model
Here's documentation for this: cem_part.txt , cem_model.txt , cem_animation.txt
For modeling the entities I recommend Blockbench, becouse it have support for Optifine custom entity models
