Need advice with building
So, I am trying to make a castle with 3 rooms(one in the tower), with this approximated shape. I prefer cobblestone over other materials. If you can help please tell me how to build it and give an approximate amount of blocks. Thanks in advance

This assumes you're looking for the minimal structure that would meet the desciption and pic; the result would be more a minor guard tower than a castle IMO, but getting above a minimum structure introduces too many variables to be able to do something like a block estimate.
A 2-story is technacally be done in 5 blocks vertical [bottom slab - air - top slab - carpet - air - bottom slab (with no lighting needed)], but 7 'blocks' high [floor - carpet - air - decorative - carpet - air - roof ] allows for a much better looking build and more utility.
Minimum footprint I'd do would be maybe 6 wide 10 long (inclusive of walls so a 4x8 room) with an attached tower that is just a 2x2 stairwell leading to an observation post.
The main block walls, floor, and roof would require 288 blocks (not correcting for doors, windows, etc. and assuming the floor/'decorative'/roof layers were all full blocks.
A minimal tower (similar assumptions) is 9 blocks per level or 126 blocks [+ deck and roof materials] assuming you want the tower to be twice the height of the main structure [again not counting the observation deck and roof]
Total would be 414 ~4.5 stacks [assuming all full blocks and making none of the adjustments as noted]
Built as described and done out of unrelieved cobble, this thing would be both tiny & extreemly utilitarian, but might serve as a quick structure to get out of a starter hovel while building something better.

There are a lot of ways the described structure could be expanded, but having a clear idea of what you built [there are a number of variations that my description would encompass] as well as what you want the expansions to do (either aesthetically or functionally) seems needed to avoid talking past one another…
As a very simple example you could extend walls equal to the 1-story height of the box (possibly plus a bit) to enclose a bailey plus whatever boxes (similar to the first) are needed to hold your ideas. To this could be added a simple gate.
Alternatively, you could mirror the original structure with a short walls (with a gates) between the ends of the two boxes to produce a sort of barbican / gatehouse for a still further expansion into a much larger structure…

I always use the Fibonacci sequence for inspiration when planning builds. 1,1,2,3,5,8,13,21,34.... the next number is the sum of the previous two. Use two adjacent numbers for rectangles. For example the large room could be 13 in height and width and 21 long. Dividing two adjacent numbers gives you what's known as the golden ratio and is found throughout nature and has been used in art and architecture throughout history.

That's a bit too short for that. The minimal height is 10 and it has to fit 2 2 floors with at least 1 room per floor.
