Because java updates are also about pushing folks to update their ram/cpu/graphics/windows version/force you off older servers.
happens to me, it says its bcuz my graphic card is outdated i thought i was supposed to play 1.8 or something BECAUSE ITS OUTDATED
Happens to me as well, new launcher just doesn't seem to work for old versions, there is a different launcher called MultiMC: https://multimc.org which I sometimes use if the normal launcher won't work.
play on 1.7.10, that is MUUUCH more modern than 1.7 or older and is still part of 1.7.
1.7 or 1.6 may not work as it conflicts with newer versions.

Try running older versions in different directory. The thing is the old versions might have conflict with config files of the newer ones.
I have limited technical know-how about this sort of thing, but if you post more details some folks may be able to help you. I'd recommend posting your computer's system information, for starters.
I've had some experience with this sort of thing too. For the last few years I've been mostly playing on 1.12.2 because I use MCEdit still (hoping to transition the Amulet editor eventually). What's scary with 1.12.2 though it is every once in a while a while it makes me whole computer lock up, which sucks. I actually bough a new laptop in 2019 thinking it was just my laptop getting old but it happens on my new one too!
I also know if I go waaay back to, say, 1.5 or lower, sometimes the game does just crash outright when I launch. Which is depressing, because I agree the very early versions of Minecraft have a look and feel that is different and gives me nostalgic warm fuzzies. The best workaround I've found for that is watching really old Minecraft videos from when the game first came out.

Also older versions are just plain old not as optimized
