I would think them gaining speed 2 and squirting out blindness if they were attacked would be cool

Mobs dont need much use fit in the game.
I mean bats are a lot more useless than squids, at least squids give you ink for black dye

Squid eyes should used to make better see in water potion.
Night vision helps you see in water and water breathing dose too.
That's a problem. Minecraft is full of animals that just walk and noobs can kill them. Pandas, squids ... Animals don't have to be killed to be useful. For example, feeded pandas would cut the vines to help you walk (I know THIS example is not good but something like this)
dolphins also drop nothing, but they are still useful.
Pandas can snort slime balls.

maybe squid tentacles to use in some potions or as food
