Hmm. That is a tough one. I'm a guy who like my mods, so to pick one favorite one is hard. It would definitely be a one with a lot of content. I'll probably have to go with Thaumcraft. It's updated regularly and always outdoes itself. Azanor is a genius.

Optifine, It allows players with older computers and slower connections the ability to enjoy the game.
They also allow for Capes, which is a plus.

Either Balkon's weapons mod, Tinkerer's construct, or Thaumcraft. All of these are great and add a really cool aspect to the game. I have plenty of other mods that I find good but these are the best

... Umm mo creatures, tornado mod, or divine rpg... If I had to choose one it would be tornados mod

I personally love NODUS. I run a server and it is an indispensable tool in catching x-rayers and finding hidden chests.
Of course I do not allow players to use it. But it is awesome for staff. The only tip I would give for server owners is turn fly off on your server so it will boot people flying using NODUS fly. It will NOT boot people flying in creative or using /fly.
Also Optifine is quite nice.
As for Server Mods I love DisguiseCraft and CraftBook.
