Sheep is an anomaly, just like fish. English isn't regular. But while there are quite a few words that use the singular form for the plural as well, there are none that use the plural for the singular (at least not that I know of). I'm not saying English isn't confusing/weird/irregular.

One Peeper for talking about one Peeper. One Peepers for the entire nest. Two-Three Peepers for the three little chicks roaming around user's profiles. That's how I view things.

At least in the vernacular English, species names are typically not capitalized--I would therefore assume that if it were a species name the creatures would be called a peeper(s) rather than a Peepers.
