I'm just concerned that these pixel bird parents named each one of their pixel bird children Peepers.

But what if it's the species name and not their personal names? 🤔
At least in the vernacular English, species names are typically not capitalized--I would therefore assume that if it were a species name the creatures would be called a peeper(s) rather than a Peepers.
It could possibly mean that the parents collectively nicknamed the Peepers as, well, Peepers.

"One Peepers" is probs not correct. But I like the way it sounds anyway.
One Peeper sounds more correct, but it does say "Peepers" on the trophy, even if a person found only one.

The official description says "It's Peepers!". The use of singular "it" implies that "Peepers" is the name for one lil birdy. Still, I want to call him just Peeper ( ・ ▼ ・ )

Sheep is an anomaly, just like fish. English isn't regular. But while there are quite a few words that use the singular form for the plural as well, there are none that use the plural for the singular (at least not that I know of). I'm not saying English isn't confusing/weird/irregular.
