This is Crabfish, an alien creature originating from a game called Elysian Eclipse.
It is used as a test for many Aquatic Stage features, and now you can take Crabfish to Minecraft!
Its original design was made by a Reddit user nicknamed u/Abstract Enigma, which won an Aquatic Art Contest, and got entirely implemented into the game as a preset creature as a reward for being at 1st place (reference image below)
