This is a fully functional vineyard, the grapes in the grapevine will grow back and mature, and you can create various alcoholic beverages through the process of harvest, primary fermentation, filtration and then secondary fermentation. The wine will turn out differently depending on what you do on each stage.
Harvesting:

These are the grape vines, they naturally grow back in three days, and they will mature, thus turning into birch leave (as shown in the screenshot). Rain and weather will affect the speed of growth. You can harvest them with shears
Grape Harvester:

You can find the grape picker here and he will turn the leaves you harvested into grapes, oak leaves turn into young grape and birch leave turns into old grapes.
Primary Fermentation:

You can turn your grape into fermented grape juice here, you can only put one grape every two day, depending on the wine you are trying to make, it will take different amount of grape and thus different amount of time. You will get "ice fermented juice" if you put ice under the trapdoors nearby, however the ice is consumed in the process. You can also put apples in and it will turn into cider
Filtration:

You can filter your "fermented grape juice" here with the villager here.
Secondary Fermentation:

Here is when wine is finally produced, you can put the filtered fermented grape juice into the oak barrel, and it will finally turn into wine. It will take seven days for any fermented grape juice to turn into wine. Wheat put into the oak barrel will turn into beer.
