On my server, there's a massive hotel that someone designed but didn't fill. I managed to design the reception and first floor of it, but the rest of it is empty. If anyone would like to undertake the project and design the rest of it, check out my server and tell me that you're interested in building it.

WorldEdit and VoxelSniper are available as tools to help, but are only available to admins/mods/high ranking players.
