I'm waiting for my favorite server, Creation Bay (server.creationbaymc.com), to update to 1.4 so I took a much needed break to think about my next big thing there, but also to sate my need for a bit of Medieval fun so I generated this little exercise in depth and detail.
Essentially, it's a three story Nordic styled Medieval pub and inn complete with a few details from the 1.4 update such as the Steve Heads, potted plants, and (FINALLY) perfectly cornered step blocks. Not too big and not too small. Enjoy!

Not a world build, just the build schematic is in the file.

It's where you rotate colors, usually pink, brown and white like ice cream. I can never get it to look good.

Visit Creation Bay and they'll offer clues. But, from me, initially I think you have to have a keen interest in the genre and also classic architecture. There are many Medieval styles to choose from, so it's important to understand what you naturally gravitate to, and then stick with that style exclusively until you're satisfied.
Being a skilled MC builder is a different school of thought. Practice, practice, practice - but don't take it so seriously that it'll make you quit. Learn from others, observe carefully, forget your pride if you fail, and if you do fail: Get up, be sickening, and make them eat it.
