It's been a while, but I decided to come back to this series. The end goal is to beat the ender dragon, have full enchanted netherite, and have an established base. enjoy!

Can now buy ghast tears from the second nether villager, and can also buy end portal frames from the end villager.

I just started playing this and the tick speed seems really high? A tree I planted grew and knocked me to the ground before I could step away(made me think I was falling through the ground for a moment, lol) and my wheat was grown before I finished cutting said tree down. Was this intentional?

yes and no. I usually play with a pretty high tick speed (because I'm relatively inpatient when it comes to waiting in games) and I forgot to turn it back to the default before uploading... sorry. there is a secret Dev room though... so try to find that, and you'll be able to change the tick speed, among many other things.
