I've increasingly felt that "epic" builds, while impressive in design, are sometimes difficult to integrate into the "real" Minecraft world. So I've been focusing more and more on builds that are "Steve Size" for lack of a better term. I usually test this out by spawning in some villagers to see this they seem overwhelmed by the size of the build or if they reasonably fit.

With that being said, this is my best attempt so far at a "Steve Size" Castle. I've tried to make sure it has all the parts of a castle: curtain wall, Keep, defensive tower, and a tall "VIP" tower with a private bedchamber. The stables also double as the gatehouse. The courtyard has a pig pen and a chicken coop. There is also a longhouse with beds and a stove. The Keep also has additional beds in the attic.
