I explored a ravine without seeing a face,
I mined there the entire night,
I had no armor, no weapons,
but I lost no health, I'm completely fine,
it's hard to find a monster to fight,
it has nothing to do with the server's difficulty,
the mob don't spawn as frequently as they should,
it's nowhere close to vanilla,
and that's my problem with this server.

That's weird. I play there myself - mobs spawn normally on this server. It's standard vanilla map. Nothing broken. Maybe you had that luck of mobs not spawning there... The server is set on easy difficulty - less mobs spawning maybe.
