I feel like asymmetrical shading in the hair feels more natural and looks nice, but thats just my opinion. Symmetrical shading can look nice as well.
As for the face, I just highlight where the nose would be (it can't be the center because the face is 8 pixels, not 9) and use dark shades where the hair would be covering the face.
