I guess this isn't the best... I entered a contest that didn't allow shading, noise, or layers. I went for a skin split up into different mobs.
Head = Slime
Torso = Creeper, Skeleton, Shulker
Left Arm = Endermite, Silverfish
Right Arm = Ghast, Guardian
Left Leg = Vex (Favorite!), Magma Cube
Right Leg = Phantom, Wither
Tail = Any mob splashed with invisibility
