I always had an idea of Minecraft Underwater Survival. What happens in this series would be you stayed on the surface for one night, and collect as much as possible and when it turns morning you head underwater. A good way to survive is with a bucket, and a fishing rod.

Good concept, put would the players get Aqua Affinity Helms?

I haven't really worked out all the details, but I don't think that anything would be spawned in. If the player would get the Aqua Affinity Helmet, then I'm pretty sure it should be gained legitimately.
