It is possible to edit the MCFunction file of the datapack to remove any profession you want.

Some other challenge ideas for no villager use i've been doing is grind enchantments mods/packs so i can only get what i need if i find it on an item in chests. XD
Gotta love soft-locking yourself, it can make every little thing so rewarding. ^_^
