You can have a datapack on any scale, with anything you want, except from packs that needs use of experimental features (worldgen) or has any changed/edited game textures. (bad at drawing)
If I find them interesting, I'll make it happen.

Been looking around for a datapack that allows you to open a shulker box by hovering over it in your inventory and right clicking but haven't found one. If possible, I think this would be a really cool qol datapack.

A way to capture any type of mob, maintaining his attributes. I mean, an easy way of transport mobs (hostile or not). An example, I want to bring home a wither skeleton (with his halloween head), with one click capture it an put it in my inventory to bring him safely to my base. And release him later in the overworld maintaing his halloween head.

You can fish anywhere, and get different item's according to the biome. (ie. sand in desert, snowballs in snowy tundra, etc)

Data pack that makes Instant minable Deepslate and End Stone with Efficiency V Haste II Netherite Pick, I've seen a lot of requests for the idea, but no one implementing it.
Bonus points if it's configurable, i.e. with or without Haste II being required.
Data pack that increases mob drops if a mob dies by a magma block or wither rose (a common way to kill entities in farms).
The purpose would be for players to build smaller farms on servers with fewer entities, substantially saving on server lag.
Again, configurability would be nice, a server could substantially limit the number of mobs produced in a farm while cranking up the drops to 30x so that the player sees no change in result.
Love the work by the way, recently stumbled across you, I'll keep an eye in the future.

My idea is:
Auto tree farm block: Generates 1-3 logs every 2 mins cant use bone meal. (To craft it you need 8 Iron blocks 1 hopper and 1 sapling.
Auto mob farm block : Generates 1-3 items every 4 mins. (To craft it you need 8 Iron blocks 1 hopper and in the middle you need to put Mob drops like rotten flesh(if you want it to be zombie farm) iron ingot( if you want it to be iron farm) gunpowder(if you want it to be gunpowder farm).
Auto tree farm block: Generates 1-3 logs every 2 mins cant use bone meal. (To craft it you need 8 Iron blocks 1 hopper and 1 sapling.

Some dumb ones i have:
Glock squid, shoots any mobs directly behind it. (the glock is on the end of the tentacles.)
Cloaked squid, they're invisible.
Clock squid, stops time.

A data pack that automates the world with machines (a challenge with no resource pack) like :
wood farm (a cut machine that can replant and cut trees but requires energy)
stone farm (enough saying, its just lava + water in a machine)

Anything "new" with NO resource pack usage is usually a challenge.
And I'm bad at texturing so I'm going no resource pack mode.
So I guess I'm always being challenged.

UPDATE: Scripter 2 is in testing phase, which means I'm close to being done with this toolset.

A Star Trek Space one please. This one contains a LOT of opportunities, and is very extend, with various series so you can do it about whatever series/film you want, I recommend Star Trek Discovery.

Since I can't seem to find one like this, but I've been wanting to do a hardcore run with the exception of when you die the world is forced into a spectator mode but instead it randomly teleports you to a new 'spawnable' area in the world where you have to restart.
This could of course just be for a normal game without having to be in hardcore. This idea would give the opportunity randomly bumping into an old structure the longer you've been playing.

UPDATE: Working on a new Scripter to handle massive-scaled packs + makes it easier for Scripter to adapt with new changes Mojang's coming up with to speed up updates to new versions.

copper hopper with those unique properties:
- only one item slot instead of five
- once an item is in, the amount never goes below 1 of that item unless the copperhopper gets powered
- when powered, copperhopper empties itself all at once into the storage of the next block, or if not attached to a storage block acts as a dropper for the entire stack at once
Additionally, repeatedly powered it could be used for more controlled item transportation by injecting entire stacks directly into a bubble column in unattached/dropper mode.
