I actually made this quite a while ago while a friend and I were trying to make a resort as a fountain head, but it turned out to be as tall as a mountain so that didn't make sense. It was going to be a secret base, but we got lazy and created a new world and I also quit Minecraft for a while. But now I'm back on and here's a dolphin =D.
The dimensions are 39W x 45L x 62H

OH a way to help you I think is to start with a flat part first. For example, I would just create a 2d side view of the dolphin first, then build out. So for this I started in the middle which is also the biggest part of a profile view of the dolphin. Then, I added 3D after that and I really spent a lot of time putting blocks and deleting blocks and moving back and forth to see what looked good.
