Here's a mining guide! Enjoy!

COAL. Coal can be found almost anywhere, deep in the caves or on the surface in Extreme Hills biomes. It only requires a wooden pickaxe (or higher) to break it. It drops 0-2 experience when mined.

IRON. You can find iron on levels of 1-63.  Unlike coal, it takes a stone pickaxe or higher to mine.  When smelted (it drops the ore block) you get 0.7 experience points. It also cannot be mined with a gold pick.

GOLD.  Gold is found on the bottom 32 layers of the map, although most commonly found on layers 2-29. It takes an iron pickaxe or higher to mine. It gives you one XP for each block smelted.

DIAMOND. Diamonds are some of the rarest things in the game, and can only be found on layer 16 and below.  It's most commonly found in layers 5-12. Watch out for lava, though! They give you 3-7 XP points when mined.

LAPIS LAZULI. Lapis can be found on layers 31 and below, although most commonly found between levels 13-16. It takes a stone pickaxe or higher to mine. It drops 4-8 pieces when mined, also 2-5 XP's.

REDSTONE. Redstone is found on the bottom 16 layers of the map, taking an iron or higher pickaxe to mine. It drops 4-5 pieces of redstone when mined, also 1-5 XP points.

You may encounter some generated structures. Here's what they are.

DUNGEONS. Dungeons are made of mostly mossy cobblestone, containing 1-2 chests and a monster spawner. They can spawn zombies, skeletons, or spiders.

ABANDONED MINESHAFTS. These are long complexes of tunnels. It's the only place where you can find wood underground, making them very useful. They contain rails and chests, which can contain useful items, even diamonds!

STRONGHOLDS. This is a very confusing complex of tunnels and rooms. The most useful are probably the library and, of course, the End portal room.  Beware of silverfish!

You also may encounter lava or ravines.

OTHER. Lava is common- watch out! There are also ravines, where you can find many useful ores and sometimes a passageway to the surface.

If any of this info is wrong, I apologize, please correct me so I can correct this!

A, why make a mining guide?
B, gold does not drop XP, and diamond does.
C, lava and ravines are not structures

A. Why not?
B. I meant when you smelted gold. I'll fix those errors.
C. I thought it was clear that lava and ravines were under OTHER. I'll make it clearer.
