I have... too many times. You may say "Well then do something. Build something. Go mining." Well, mining and building aren't always what they're cracked up to be. So allow me to give you a few alternatives.
Play a minigame
God knows that there's plenty of them out there. Minigames are what keep you going when you start to get bored of regular minecraft. It's hard to believe, but sometimes mining can be boring as balls and you just want to kill someone in a small match of hungergames.
Install some mods
As one of my least favorite youtubers love to say, "It's like a whole new game!". Mods add another layer to the game of minecraft essentially changing the entire essence of it. You can double your ores, create an industrial revolution, or even brew up a godly potion if you really want to. Anything is possible with mods.
Can't install mods though? Get a mod pack launcher. Then you won't even have to try when using mods, you can get them at the push of a button! This allows you to do more than just play by yourself, you can also play with other people!
Play another game
Eyup. You did read that right. I said play another game. It's no surprise that minecraft isn't the only game out there, neither is it the best. So when you start to get bored of minecraft, don't try to hang on by a thread. Try something else on for size and see how you do then. I promise you that you will enjoy it at least a little bit.
