Thirst Bar
Your Thirst diminishes similarly to your food bar. Drink water bottles to replenish it. If you don't boil your water by placing a water bottle on a campfire and purify it, you might get a Thirsty effect from drinking it.
River water is Pure. Stand or swim in river water to slowly drink from it. Or, you can grab some using a glass bottle.
If your Thirst falls to 0, you will start to take damage. If on Hard mode, you can eventually die. In Peaceful mode, you never lose Thirst.
Stamina Bar
Your Stamina diminishes as you do physically demanding activities. The amount of Stamina you have and the rate at which it regenerates depends on what Difficulty your game is set to.
Having low Stamina makes you slow and eventually makes it so you can't move at all, so do not let it reach 0.
Temperature
Your Temperature depends on the climate around you primarily, as well as several other factors. Biomes, time of day, blocks around the player/blocks the player is touching, mobs around the player, player's Stamina, items the player is holding, as well as several other things all affect the player's Temperature.
You can craft a Thermometer to see your current Temperature by throwing 4 glass blocks and 1 redstone dust on the ground. Holding a Thermometer shows your temperature, but throwing it on the ground shows the Climate around that Thermometer. It can also be placed in an Item Frame.
Being too Hot or too Cold will start to hurt you. You will know if you are overheating or freezing because your screen will turn warm or cool. If in Peaceful mode, you will only have negative status effects. In other modes, you will start to get damaged. If in Hard mode, you can eventually die from it.

You can now toggle settings. You can turn off Temperature and keep Thirst and Stamina on, or just have Stamina if you wanted.
